Ingredients

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1 cup heavy cream
  • ½ cup unsalted butter (1 stick), cubed
  • 1 tsp pure vanilla extract (or ½ tsp vanilla bean paste)
  • ¼ tsp salt (optional)

Instructions

  1. Line an 8×8 or 9×9-inch pan with parchment paper, leaving overhang on the sides.
  2. In a heavy-bottom saucepan, stir together sugar and corn syrup over medium heat until combined.
  3. Once bubbling, add butter and half the cream carefully. Stir until butter melts.
  4. Add the remaining cream and insert a candy thermometer.
  5. Cook without stirring until the mixture reaches 245°F–248°F.
  6. Remove from heat and stir in vanilla and salt.
  7. Pour into the prepared pan without scraping the bottom of the pot.
  8. Let cool at room temperature for 3–4 hours until firm.
  9. Cut into squares and wrap in wax paper.

Notes

Store wrapped caramels in an airtight container for up to 2 weeks at room temperature or longer in the fridge. Perfect for gifting or holiday treat boxes.
