Ingredients

  • 2 cups Medjool dates, pitted
  • 1/4 cup almond butter
  • 1 vanilla bean, split and scraped
  • 1/4 teaspoon sea salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Soak the dates in warm water for 10 minutes to soften.
  2. Drain the dates and place them in a food processor.
  3. Add almond butter, vanilla bean, and sea salt to the processor.
  4. Blend until smooth and creamy.
  5. If using, fold in the chopped nuts.
  6. Transfer the mixture to a lined baking dish and spread evenly.
  7. Chill in the refrigerator for 1 hour.
  8. Cut into squares and serve.
