- 2 cups Medjool dates, pitted
- 1/4 cup almond butter
- 1 vanilla bean, split and scraped
- 1/4 teaspoon sea salt
- 1/4 cup chopped nuts (optional)
Instructions
- Soak the dates in warm water for 10 minutes to soften.
- Drain the dates and place them in a food processor.
- Add almond butter, vanilla bean, and sea salt to the processor.
- Blend until smooth and creamy.
- If using, fold in the chopped nuts.
- Transfer the mixture to a lined baking dish and spread evenly.
- Chill in the refrigerator for 1 hour.
- Cut into squares and serve.

- Store in an airtight container in the fridge.
- These caramels can also be rolled into balls for a different shape.
