A refreshing tropical chia seed pudding with coconut and mango.
Ingredients

- 1/4 cup chia seeds
- 1 cup coconut milk
- 1/2 cup mango puree
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
- Fresh mango slices for topping
- Coconut flakes for garnish
Instructions
- In a bowl, mix chia seeds and coconut milk.
- Add mango puree, honey, and vanilla extract. Stir well.
- Cover and refrigerate for at least 4 hours or overnight.
- Once set, stir the mixture again.
- Serve in bowls topped with fresh mango slices and coconut flakes.
Notes
- Adjust sweetness according to your preference.
- For a thicker pudding, add more chia seeds.
- Can be stored in the refrigerator for up to 5 days.
