Description

These tiramisu sandwich cookies are soft, chewy, and filled with a luscious mascarpone cream inspired by the classic Italian dessert. With rich notes of coffee and cocoa, they’re the perfect handheld treat for any sweet tooth.


Ingredients

  • 1 ½ cups (190 g) all-purpose flour
  • ½ cup (50 g) unsweetened cocoa powder, plus extra for dusting
  • 2 tablespoons instant espresso powder
  • ¾ cup (150 g) granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (115 g) unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (240 g) mascarpone cheese
  • ½ cup (120 ml) heavy cream
  • Dark chocolate shavings, for garnish

Instructions

  1. In a medium bowl, whisk together flour, cocoa powder, espresso powder, baking powder, and salt. Set aside.
  2. In a large bowl, beat softened butter and sugar on medium speed until light and fluffy (2-3 minutes).
  3. Add egg and vanilla extract; mix until combined.
  4. Gradually add dry ingredients to wet mixture and mix on low until just combined.
  5. Cover dough with plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  7. Scoop tablespoon-sized portions of dough, roll into balls, and place 2 inches apart on sheets. Gently flatten each ball.
  8. Bake for 10-12 minutes, until edges are set and tops are slightly cracked. Cool on sheets 5 minutes, then transfer to wire racks.
  9. In a bowl, whip heavy cream until soft peaks form. Fold in mascarpone and 1 tablespoon cocoa powder until smooth and creamy.
  10. Once cookies are cool, spread filling on the flat side of one cookie and top with another to form a sandwich. Repeat with remaining cookies.
  11. Dust tops with extra cocoa powder and sprinkle with dark chocolate shavings.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend with xanthan gum. For vegan cookies, substitute egg with a flaxseed egg and mascarpone with a dairy-free alternative.
