  • ¾ cup granulated sugar

  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 cup self-rising flour (or 1 cup all-purpose + 1½ tsp baking powder + ¼ tsp salt)
  • 1 cup milk
  • 1 cup sugar
  • ½ teaspoon vanilla extract
  • ½ cup (1 stick) unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Place a 9×13-inch baking dish inside with the butter to melt.
  2. Peel and slice peaches if using fresh. In a saucepan, combine peaches, sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Cook over medium heat for 5–7 minutes until thickened and syrupy.
  3. In a bowl, whisk together flour, sugar, milk, and vanilla extract until smooth.
  4. Once the butter is melted in the dish, pour the batter into the pan without stirring. Spoon the peach mixture evenly over the batter. Do not mix.
  5. Bake for 40–45 minutes until the top is golden brown and edges are bubbling. A toothpick inserted should come out clean.
  6. Cool for 10–15 minutes and serve warm with vanilla ice cream or whipped cream.

Notes

Use ripe peaches for optimal flavor. For extra crispiness, sprinkle raw sugar on the batter before baking. A splash of bourbon or pinch of ground ginger can deepen the flavor.
