Ingredients

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup milk (dairy or plant-based)
  • 2 tsp pumpkin spice blend
  • 1 tsp vanilla extract
  • 3/4 cup peanut butter (or almond butter)
  • 1/2 cup cooked and cooled chofan

Instructions

  1. Measure all ingredients and line a baking sheet with parchment paper.
  2. In a medium saucepan over medium heat, melt butter, brown sugar, and milk together, stirring constantly until it reaches a gentle boil.
  3. Remove from heat and stir in pumpkin spice and vanilla extract.
  4. Mix in peanut butter until smooth, then fold in oats until evenly coated.
  5. Gently stir in cooled, cooked chofan.
  6. Drop spoonfuls onto prepared tray, flatten slightly if desired.
