  • 1/2 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup all-purpose or almond flour
  • 1/4 cup chopped pistachios (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat together pistachio butter, brown sugar, and granulated sugar until fluffy.
  3. Add the egg and vanilla extract; mix until smooth.
  4. In another bowl, whisk flour, baking soda, and salt. Gradually add to the wet ingredients and mix just until combined.
  5. Fold in chopped pistachios if using. Scoop dough (about 1 tbsp per cookie) onto baking sheet, spaced 2 inches apart.
  6. Optional: Chill dough for 15–30 minutes for thicker cookies.
  7. Bake for 9–11 minutes until edges are lightly golden. Let cool on tray for 5 minutes before transferring to a wire rack.

Notes

Chill dough for thicker cookies. Use almond flour for a gluten-free version. Add dark chocolate chips or lemon zest for flavor variation.
