Ingredients

  • 2 cups granulated sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • 1½ cups pineapple juice (fresh or canned)
  • 1 cup crushed pineapple (drained)
  • 1 tsp vanilla extract
  • ½ cup vegetable oil
  • Optional Glaze:
  • 1 cup powdered sugar
  • 23 tbsp pineapple juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, mix flour, sugar, baking soda, and salt.
  3. In another bowl, whisk eggs, pineapple juice, vanilla, and oil.
  4. Stir the wet mixture into the dry ingredients just until combined.
  5. Fold in the drained crushed pineapple gently.
  6. Pour batter into prepared pan and bake for 35–40 minutes, or until a toothpick inserted comes out clean.
  7. While cake is warm, mix glaze ingredients and pour evenly over the top.
  8. Let cool, then slice and serve.

Notes

For extra richness, substitute half the oil with sour cream or Greek yogurt. Drain pineapple well to prevent soggy texture.
