This moist and tangy Pineapple Juice Cake is a Southern favorite, packed with tropical flavor and perfect for any occasion.

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 tsp baking soda
- ½ tsp salt
- 2 large eggs
- 1½ cups pineapple juice (fresh or canned)
- 1 cup crushed pineapple (drained)
- 1 tsp vanilla extract
- ½ cup vegetable oil
- Optional Glaze:
- 1 cup powdered sugar
- 2–3 tbsp pineapple juice
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, mix flour, sugar, baking soda, and salt.
- In another bowl, whisk eggs, pineapple juice, vanilla, and oil.
- Stir the wet mixture into the dry ingredients just until combined.
- Fold in the drained crushed pineapple gently.
- Pour batter into prepared pan and bake for 35–40 minutes, or until a toothpick inserted comes out clean.
- While cake is warm, mix glaze ingredients and pour evenly over the top.
- Let cool, then slice and serve.
Notes
For extra richness, substitute half the oil with sour cream or Greek yogurt. Drain pineapple well to prevent soggy texture.
