  • Pinch of salt
  • Optional: 1 cup chocolate chips (for coating)
  • 1 tsp coconut oil (for melting chocolate)

Instructions

  1. Toast pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Let cool.
  2. In a large bowl, mix pecans, graham cracker crumbs, brown sugar, syrup, melted butter, vanilla, and salt until combined.
  3. If mixture is too dry, add a bit more syrup; if too wet, add extra crumbs.
  4. Chill the dough for 10–15 minutes to firm up.
  5. Use a scoop or spoon to portion and roll into 1 to 1.5-inch balls.
  6. Place balls on parchment-lined tray and refrigerate for 30 minutes.
