These no-bake pecan pie balls bring the gooey, nutty flavor of classic pecan pie into quick, easy bite-sized treats—perfect for holidays, parties, or late-night snacks.

- 2 cups chopped or crushed pecans (toasted recommended)
- 1 ½ cups graham cracker crumbs
- ⅔ cup brown sugar
- ¼ cup corn syrup or maple syrup
- ½ cup melted butter (unsalted)
- 1 tsp vanilla extract
- Pinch of salt
- Optional: 1 cup chocolate chips (for coating)
- 1 tsp coconut oil (for melting chocolate)
Instructions
- Toast pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Let cool.
- In a large bowl, mix pecans, graham cracker crumbs, brown sugar, syrup, melted butter, vanilla, and salt until combined.
- If mixture is too dry, add a bit more syrup; if too wet, add extra crumbs.
- Chill the dough for 10–15 minutes to firm up.
- Use a scoop or spoon to portion and roll into 1 to 1.5-inch balls.
- Place balls on parchment-lined tray and refrigerate for 30 minutes.
- For chocolate coating: melt chocolate chips with coconut oil using microwave or double boiler.
- Dip balls halfway or fully in chocolate, let excess drip off, and place back on tray.
- Chill again for 15–20 minutes until chocolate is set.
Notes
Store in an airtight container in the fridge for up to 10 days or freeze for up to 3 months. Customize with bourbon, coconut, vegan swaps, or gluten-free ingredients as desired.
