- 2 medium fresh peaches, diced
- 2 tablespoons honey or maple syrup

Instructions
- In a medium bowl, whisk together chia seeds, milk or cream, vanilla extract, and honey or maple syrup.
- Let the mixture sit for 10 minutes, then stir again to prevent clumps.
- Cover and refrigerate overnight or for at least 4–6 hours until thickened.
- When ready to serve, spoon the pudding into glasses or jars, layering with diced peaches.
- Top with a swirl of whipped cream, yogurt, or coconut cream if desired.
- Garnish with thin peach slices and a sprinkle of granola or crushed nuts.
Notes
For a smoother texture, blend the pudding before chilling. Store in the fridge up to five days. Try swapping peaches with berries or apples for seasonal variations.
