Description

Ingredients

  • 1 cup milk or cream (dairy or plant-based)
  • 2 medium fresh peaches, diced
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Optional: pinch of cinnamon or nutmeg

Instructions

  1. In a medium bowl, whisk together chia seeds, milk or cream, vanilla extract, and honey or maple syrup.
  2. Let the mixture sit for 10 minutes, then stir again to prevent clumps.
  3. Cover and refrigerate overnight or for at least 4–6 hours until thickened.
  4. When ready to serve, spoon the pudding into glasses or jars, layering with diced peaches.
  5. Top with a swirl of whipped cream, yogurt, or coconut cream if desired.
  6. Garnish with thin peach slices and a sprinkle of granola or crushed nuts.

Notes

For a smoother texture, blend the pudding before chilling. Store in the fridge up to five days. Try swapping peaches with berries or apples for seasonal variations.
