  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • For streusel: 2 tbsp butter, 2 tbsp flour, 2 tbsp brown sugar, 1/4 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Dice peaches into 1/4 inch cubes. Toss with 1 tsp sugar, 1/4 tsp cinnamon, and optional cornstarch. Set aside.
  3. In a bowl, cream softened butter and sugar until light and fluffy.
  4. Beat in egg and vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  7. Gently fold in diced peaches using a spatula. Do not overmix.
  8. In a small bowl, combine all streusel ingredients and mix with fingers until crumbly.
  9. Scoop dough onto prepared baking sheet, spacing cookies apart. Top each with streusel.
  10. Bake for 10–12 minutes until edges are golden and centers are set.
  11. Cool on baking sheet for a few minutes before transferring to a wire rack.

Notes

For best texture, chill dough for 30 minutes before baking. Optional: Drizzle with cream cheese glaze for added richness. Store in airtight container or freeze for longer shelf life.
