Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ tsp salt
  • 1 tsp vanilla extract
  • ½ tsp cinnamon (optional)
  • 3 cups peeled, chopped peaches (fresh, canned, or thawed frozen)
  • ¼ cup sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix melted butter, granulated and brown sugar, salt, and vanilla extract.
  3. Stir in flour until crumbly. Reserve 1 cup for topping.
  4. Press remaining dough into pan to form crust. Bake for 12–15 minutes until lightly golden.
  5. In another bowl, toss peaches with sugar, lemon juice, cornstarch, and vanilla. Let sit to release juices.
  6. Pour peach filling over warm crust and spread evenly.
  7. Sprinkle reserved crumb mixture over peaches.
  8. Bake for 35–40 minutes or until golden and bubbly.
  9. Cool completely before slicing. Chill for clean cuts.

Notes

Drain canned or frozen peaches thoroughly to avoid soggy crust. For variation, try adding citrus zest, chopped nuts, or warm spices like cardamom or ginger.
