- 1 cup almond flour (or finely ground almonds)
- ½ cup all-purpose flour (or gluten-free flour blend)
- ¾ cup shelled, unsalted pistachios (chopped)
- ¾ cup granulated sugar (or coconut sugar)
- 3 large eggs
- ½ cup olive oil (or melted butter)
- Zest of 2 oranges
- ½ cup freshly squeezed orange juice
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp sea salt
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a bowl, whisk almond flour, all-purpose flour, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, sugar, orange zest, juice, olive oil, and vanilla until well combined.
- Gradually mix the dry ingredients into the wet mixture until just combined. Fold in chopped pistachios gently.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30–35 minutes or until a toothpick inserted comes out with a few crumbs.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Optional: Mix ½ cup powdered sugar with 1–2 tbsp orange juice for a glaze and drizzle over cooled cake.
Notes
Toast pistachios before chopping to enhance their flavor. Always zest before juicing for maximum citrus aroma. Store airtight for up to 3 days at room temperature or 6 days in the fridge.
