  • 1 cup almond flour (or finely ground almonds)
  • ½ cup all-purpose flour (or gluten-free flour blend)
  • ¾ cup shelled, unsalted pistachios (chopped)
  • ¾ cup granulated sugar (or coconut sugar)
  • 3 large eggs
  • ½ cup olive oil (or melted butter)
  • Zest of 2 oranges
  • ½ cup freshly squeezed orange juice
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a bowl, whisk almond flour, all-purpose flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, sugar, orange zest, juice, olive oil, and vanilla until well combined.
  4. Gradually mix the dry ingredients into the wet mixture until just combined. Fold in chopped pistachios gently.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 30–35 minutes or until a toothpick inserted comes out with a few crumbs.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Optional: Mix ½ cup powdered sugar with 1–2 tbsp orange juice for a glaze and drizzle over cooled cake.

Notes

Toast pistachios before chopping to enhance their flavor. Always zest before juicing for maximum citrus aroma. Store airtight for up to 3 days at room temperature or 6 days in the fridge.
