- 2 boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cups chicken broth
- 8 oz egg noodles
- 3 tablespoons unsalted butter
- 1 teaspoon garlic powder (optional)
- Fresh parsley or thyme for garnish
Instructions
- Season chicken generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken until golden brown and cooked through, about 5-6 minutes per side depending on thickness. Remove and set aside.
- In the same pan, pour in chicken broth and bring to a boil.
- Add egg noodles and stir occasionally, letting them simmer and absorb the broth (about 8-10 minutes).
- Once noodles are tender, stir in butter and garlic powder (if using).
- Slice cooked chicken and return to pan over the noodles.
- Garnish with fresh parsley or thyme before serving.
Notes
For added flavor, top with grated Parmesan or a squeeze of lemon. You can also add peas, spinach, or broccoli during the last few minutes of cooking.
