- 2 cups diced apples (about 2 medium apples)
- 1 teaspoon cinnamon
- 1/2 cup packed brown sugar
- 1 1/2 cups milk (or almond milk)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Butter or cooking spray for greasing
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Wash, core, and dice apples into small pieces.
- In a large bowl, mix rolled oats, baking powder, cinnamon, brown sugar, and salt.
- In another bowl, whisk milk, eggs, and vanilla extract.
- Combine wet and dry ingredients, then fold in apples and walnuts.
- Pour mixture into baking dish and spread evenly.
- Bake for 35–40 minutes, until golden and set.
- Cool for 10 minutes before cutting into squares and serving warm.
Notes
For best flavor, use a mix of sweet and tart apples such as Honeycrisp, Fuji, or Granny Smith. Store leftovers in the fridge for up to 5 days or freeze individual portions.
