Description

Neapolitan Swirl Cookies are soft, chewy, and stunningly beautiful with chocolate, vanilla, and strawberry layers swirled into one delicious bite. Perfect for parties, gifts, or a colorful snack.


Ingredients

  • 2 ½ cups (315g) all-purpose flour
  • 1 teaspoon (5g) baking powder
  • ½ teaspoon (2g) salt
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • ¼ cup (25g) unsweetened cocoa powder
  • ¼ cup (60ml) strawberry puree (fresh or store-bought)
  • Red food coloring (optional, for a vibrant pink)

Instructions

  1. In a large bowl, cream together softened butter and sugar until light and fluffy (2–3 minutes).
  2. Add the egg and vanilla extract. Mix until combined.
  3. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to wet mixture. Mix until just combined.
  4. Divide dough into three equal parts.
  5. Mix cocoa powder into one part for chocolate dough.
  6. Leave one part as-is for vanilla dough.
  7. Add strawberry puree (and food coloring if using) to the third part for strawberry dough. Mix well.
  8. Roll each dough separately into ¼-inch thick rectangles on parchment paper.
  9. Layer strawberry over vanilla, then chocolate. Gently press to adhere.
  10. Roll dough layers tightly into a log using parchment paper. Pinch ends to seal.
  11. Wrap log in plastic wrap and chill for at least 1 hour.
  12. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  13. Slice chilled dough log into ¼-inch rounds. Place on baking sheet.
  14. Bake for 10–12 minutes, until edges are lightly golden.
  15. Cool on baking sheet briefly, then transfer to wire rack to cool completely.

Notes

Chilling the dough is essential to get clean swirls and keep the cookies from spreading. For vibrant pink, add a drop or two of red gel food coloring with the strawberry puree.
