Description

A nostalgic Southern candy made with just three ingredients — marshmallow crème, caramel, and toasted pecans. Easy, quick, and full of old-fashioned flavor.


Ingredients

  • 1 cup marshmallow crème
  • 12 soft caramel candies (or ½ cup caramel bits)
  • 1 cup chopped toasted pecans

Instructions

  1. Line your workspace with wax paper. Chop and toast pecans at 350°F for 5–7 minutes, then cool.
  2. Shape marshmallow crème into a 6–8 inch log on wax paper. Chill in fridge for 10 minutes.
  3. Melt caramel candies in 15-second microwave intervals until smooth. Optionally add 1 tsp heavy cream for smoother coating.
  4. Remove marshmallow log and coat evenly with melted caramel using a spoon or spatula.
  5. Roll the caramel-coated log in chopped toasted pecans, pressing gently to adhere.
  6. Place finished log on clean wax paper and let cool at room temp for 15–20 minutes or refrigerate for 10 minutes.
  7. Slice into rounds and serve.

Notes

Use finely chopped, well-toasted pecans for best coverage. For a twist, drizzle or dip in chocolate after rolling in nuts.
