Description
A nostalgic Southern candy made with just three ingredients — marshmallow crème, caramel, and toasted pecans. Easy, quick, and full of old-fashioned flavor.
Ingredients
Scale
- 1 cup marshmallow crème
- 12 soft caramel candies (or ½ cup caramel bits)
- 1 cup chopped toasted pecans
Instructions
- Line your workspace with wax paper. Chop and toast pecans at 350°F for 5–7 minutes, then cool.
- Shape marshmallow crème into a 6–8 inch log on wax paper. Chill in fridge for 10 minutes.
- Melt caramel candies in 15-second microwave intervals until smooth. Optionally add 1 tsp heavy cream for smoother coating.
- Remove marshmallow log and coat evenly with melted caramel using a spoon or spatula.
- Roll the caramel-coated log in chopped toasted pecans, pressing gently to adhere.
- Place finished log on clean wax paper and let cool at room temp for 15–20 minutes or refrigerate for 10 minutes.
- Slice into rounds and serve.
Notes
Use finely chopped, well-toasted pecans for best coverage. For a twist, drizzle or dip in chocolate after rolling in nuts.
