  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil (or melted butter)
  • 1 teaspoon vanilla extract
  • 2 cups finely grated zucchini (unpeeled)
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
  3. In a large bowl, beat eggs, sugar, oil, and vanilla until smooth.
  4. Fold in grated zucchini.
  5. Add dry ingredients to wet ingredients in two parts, stirring gently until just combined.
  6. Fold in chocolate chips.
  7. Pour batter into prepared loaf pan.
  8. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
