- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder (Dutch-processed or natural)
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon (optional)
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil (or melted butter)
- 1 teaspoon vanilla extract
- 2 cups finely grated zucchini (unpeeled)
- 1/2 cup dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
- In a large bowl, beat eggs, sugar, oil, and vanilla until smooth.
- Fold in grated zucchini.
- Add dry ingredients to wet ingredients in two parts, stirring gently until just combined.
- Fold in chocolate chips.
- Pour batter into prepared loaf pan.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
- Cool in pan for 10–15 minutes, then transfer to a wire rack to cool completely.
Notes
For extra flavor, bloom cocoa powder with a few tablespoons of hot water before adding to batter. Wrap cooled loaf tightly to maintain moisture.
