Ingredients

  • 1 (14 oz) bag soft caramels (or caramel bits)
  • 3 tablespoons unsalted butter
  • 1 tablespoon milk or heavy cream
  • 3 cups mini marshmallows
  • 4 cups crispy rice cereal (or substitute with chopped pretzels or nuts)
  • Optional: 1/2 teaspoon sea salt
  • Optional: 1/2 cup mini chocolate chips

Instructions

  1. Prepare a large mixing bowl and line a baking sheet with parchment paper.
  2. In a medium saucepan over low heat, melt the caramels with butter and milk, stirring constantly until smooth (about 5–7 minutes).
  3. Add the mini marshmallows and stir until melted and gooey.
  4. Remove from heat and fold in crispy rice cereal until fully coated.
  5. Let the mixture cool for 3–5 minutes until safe to handle.
  6. Grease your hands or use a small scoop to form 1-inch balls and place them on the baking sheet.
  7. Allow to set at room temperature for 30–60 minutes, or chill in the fridge for 15–20 minutes.

Notes

For best results, use soft baking caramels and mini marshmallows. For extra flair, dip balls in melted chocolate or roll in sprinkles. Store in an airtight container for up to 1 week, or freeze for up to 2 months.
