- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon dried thyme or a few sprigs fresh
- 1 teaspoon dried basil or a few fresh leaves
- Salt and pepper to taste
- 1/2 teaspoon paprika
Instructions
- Preheat oven to 375°F (190°C).
- Pat chicken dry and season with salt, pepper, and paprika.
- Heat olive oil and butter in a large oven-safe skillet over medium-high heat.
- Sear chicken on both sides until golden brown, about 4–5 minutes per side. Remove from pan and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds.
- Pour in chicken broth and stir, scraping up any browned bits from the bottom.
- Stir in heavy cream, sun-dried tomatoes, and Parmesan cheese. Let simmer until slightly thickened.
- Return chicken to skillet and spoon sauce over each piece.
- Transfer skillet to the oven and bake for 20–25 minutes, or until chicken reaches 165°F internally.
- Top with fresh basil or thyme before serving.
Notes
Serve with pasta, mashed potatoes, or crusty bread to soak up the sauce. Add red pepper flakes for a spicy variation or mushrooms for an earthy twist.
