  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 325°F (163°C) and grease your baking pan.
  2. Cream the butter and sugar for 4–5 minutes until fluffy and pale.
  3. Add eggs one at a time, beating after each addition.
  4. Gradually add sifted flour and salt, alternating with sour cream if using. Mix in vanilla extract.
  5. In a separate bowl, mix ¼ of the vanilla batter with cocoa powder and hot water to form the chocolate swirl.
  6. Pour half the vanilla batter into the pan. Add spoonfuls of chocolate batter, then top with remaining vanilla batter.
  7. Swirl gently with a knife or skewer.
  8. Bake for 60–75 minutes, depending on your pan. Check doneness with a toothpick.
  9. Cool 10 minutes in pan, then transfer to wire rack to cool completely.

Notes

For bold color and flavor, use Dutch-processed or black cocoa powder. Wrap cooled cake in plastic to preserve moisture.
