Ingredients

- 1 cup plain yogurt
- 1 cup sugar
- 3 large eggs
- 1/2 cup vegetable oil
- 1 lemon, zested and juiced
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix yogurt, sugar, and eggs until smooth.
- Stir in oil, lemon zest, and lemon juice.
- In another bowl, whisk flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Pour the batter into a greased 9-inch round cake pan.
- Bake for 30-35 minutes, or until a toothpick comes out clean.
- Let it cool before serving.

- Store leftovers in an airtight container.
- Can be served with whipped cream or fresh fruit.
