- 1/2 cup olive oil
- 1 cup Greek yogurt
- 1/2 cup honey (preferably Greek thyme honey)
- 3 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- Optional: 1/2 cup chopped nuts (like walnuts or almonds)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In a separate large bowl, mix granulated sugar and olive oil until combined. Add Greek yogurt, honey, and eggs. Beat until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- While baking, prepare syrup: Heat 1/2 cup honey with 1/4 cup water until dissolved. Let cool slightly.
- After baking, let cake cool for 10 minutes, then drizzle with honey syrup while still warm.
Notes
Use high-quality honey like Greek thyme honey for authentic flavor. Add lemon or orange zest for extra brightness.
