Ingredients

  • 2 cups gluten free flour blend
  • 1 tbsp psyllium husk or xanthan gum
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tsp instant yeast
  • 1 ¼ cups warm water
  • 2 tbsp olive oil
  • 2 eggs
  • Optional: herbs, seeds, or shredded cheese for added flavor

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, mix the gluten free flour blend, psyllium husk or xanthan gum, sugar, salt, and yeast.
  3. In another bowl, whisk together the warm water, olive oil, and eggs.
  4. Gradually pour the wet ingredients into the dry mixture and mix until a smooth batter forms.
  5. Let the batter rest for 20–30 minutes to allow the yeast to activate.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Cover loosely and let rise in a warm place for about 30–40 minutes, or until slightly puffed.
  8. Bake for 40–45 minutes, or until the top is golden and a toothpick inserted comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra softness and moisture, you can add ¼ cup of plain yogurt or applesauce to the batter. Store leftovers in an airtight container or slice and freeze for later use.
