- 2 cups gluten free flour blend
- 1 tbsp psyllium husk or xanthan gum
- 1 tbsp sugar
- 1 tsp salt
- 2 tsp instant yeast
- 1 ¼ cups warm water
- 2 tbsp olive oil
- 2 eggs
- Optional: herbs, seeds, or shredded cheese for added flavor
Instructions
- Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, mix the gluten free flour blend, psyllium husk or xanthan gum, sugar, salt, and yeast.
- In another bowl, whisk together the warm water, olive oil, and eggs.
- Gradually pour the wet ingredients into the dry mixture and mix until a smooth batter forms.
- Let the batter rest for 20–30 minutes to allow the yeast to activate.
- Pour the batter into the prepared loaf pan and smooth the top.
- Cover loosely and let rise in a warm place for about 30–40 minutes, or until slightly puffed.
- Bake for 40–45 minutes, or until the top is golden and a toothpick inserted comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For extra softness and moisture, you can add ¼ cup of plain yogurt or applesauce to the batter. Store leftovers in an airtight container or slice and freeze for later use.
