A savory quick bread made with fresh garden zucchini and sharp cheddar cheese, perfect as a side or snack.

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder (optional)
- 1 teaspoon dried Italian herbs (optional)
- 2 large eggs
- 1/2 cup whole milk
- 1/4 cup vegetable oil
- 2 medium zucchini, grated and lightly drained
- 1 1/2 cups sharp cheddar cheese, shredded
- Extra cheddar for topping (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
- Grate zucchini using large holes of a box grater, then gently squeeze to remove excess moisture.
- Shred sharp cheddar cheese.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, and optional seasonings.
- In another bowl, beat eggs with milk and vegetable oil until smooth.
- Combine wet and dry ingredients, stirring gently until just mixed.
- Fold in grated zucchini and shredded cheddar until evenly distributed.
- Pour batter into prepared loaf pan and smooth the top. Sprinkle with extra cheddar if desired.
- Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Drain zucchini lightly to prevent soggy bread. Avoid overmixing to keep the loaf tender.
