A hearty French Onion Short Rib Stew packed with flavor.
Ingredients

- 2 lbs beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons olive oil
- 2 teaspoons thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season short ribs with salt and pepper.
- In a large pot, heat olive oil over medium heat.
- Sear short ribs until browned on all sides.
- Remove ribs and set aside.
- Add onions to the pot and sauté until caramelized.
- Add garlic and cook for another minute.
- Pour in red wine, scraping the bottom of the pot.
- Add beef broth, thyme, bay leaf, and short ribs.
- Bring to a boil, then reduce heat and simmer for 3 hours.
- Remove bay leaf and serve garnished with parsley.
Notes
- This stew tastes better the next day.
- Serve with crusty bread for dipping.
