Ingredients

  • 2 lbs beef short ribs
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tablespoons olive oil
  • 2 teaspoons thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season short ribs with salt and pepper.
  2. In a large pot, heat olive oil over medium heat.
  3. Sear short ribs until browned on all sides.
  4. Remove ribs and set aside.
  5. Add onions to the pot and sauté until caramelized.
  6. Add garlic and cook for another minute.
  7. Pour in red wine, scraping the bottom of the pot.
  8. Add beef broth, thyme, bay leaf, and short ribs.
  9. Bring to a boil, then reduce heat and simmer for 3 hours.
  10. Remove bay leaf and serve garnished with parsley.
