A simple and comforting curry dumpling soup.
Ingredients

- 1 tablespoon oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon curry powder
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 cup mixed vegetables
- 1 package frozen dumplings
- Salt and pepper to taste
Instructions
- Heat oil in a pot over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in curry powder and cook for 1 minute.
- Add vegetable broth and coconut milk, bring to a boil.
- Add mixed vegetables and frozen dumplings.
- Simmer for 10-15 minutes until dumplings are cooked.
- Season with salt and pepper.
- Serve hot.

- Use any vegetables you prefer.
- Adjust curry powder to taste.
- Can be made vegetarian by using vegetable broth.
