Description
A viral luxury dessert from Dubai featuring layers of crunchy biscuit, rich pistachio cream, soft sponge cake, and glossy dark chocolate ganache.

- 1 ½ cups crushed digestive biscuits
- ½ cup melted unsalted butter
- 1 cup pistachio paste (100% pistachio, unsweetened)
- ¾ cup sweetened condensed milk
- ¼ cup heavy whipping cream
- 1 tsp rose water (optional)
- 2 eggs
- ½ cup sugar
- ½ cup flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 200g dark chocolate (minimum 60% cocoa)
- 200ml heavy cream
- 1 tbsp butter
- Crushed pistachios (optional garnish)
- Edible gold leaf or shimmer powder (optional garnish)
Instructions
- Mix the crushed biscuits and melted butter. Press evenly into the bottom of a parchment-lined pan. Chill in the fridge for 15 minutes.
- Combine pistachio paste, condensed milk, cream, and rose water. Mix until smooth. Pour over the base and refrigerate.
- Beat eggs and sugar until fluffy. Fold in flour, baking powder, and vanilla. Bake at 350°F (175°C) for 10–12 minutes. Cool and place on pistachio layer.
- Heat cream until boiling, pour over chopped chocolate, add butter, and stir until glossy. Pour over sponge layer and spread evenly.
- Refrigerate for at least 2 hours. Garnish with pistachios and gold leaf. Slice and serve.
Notes
Use high-quality pistachio paste and chocolate for the best results. Allow each layer to fully set before adding the next.
