Description
A sweet, boozy spread made with ripe bananas, warm spices, and a splash of rum. Perfect for toast, ice cream, or gifting!
Ingredients
Scale
- 4 ripe bananas, mashed
- 1 cup of granulated sugar
- 1/2 cup of dark rum (or your choice of alcohol)
- 1 tablespoon of lemon juice
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of vanilla extract
- 1/2 cup of chopped nuts (optional)
Instructions
- Gather all your ingredients: ripe bananas, sugar, rum, lemon juice, spices, vanilla, and optional nuts.
- Peel and mash the bananas in a large bowl until mostly smooth with a few chunks for texture.
- Add sugar, rum, lemon juice, cinnamon, nutmeg, vanilla, and nuts (if using) to the mashed bananas. Stir until combined.
- Transfer the mixture to a large saucepan and bring to a gentle boil over medium heat. Then reduce to low and simmer for 30–40 minutes, stirring occasionally, until thickened.
- Remove from heat and let cool slightly. Pour into clean, sterilized jars and seal tightly. Store in the fridge for up to 2 weeks or process in a water bath for longer storage.
Notes
Use very ripe bananas for the sweetest flavor. Try adding mango or pineapple for a tropical twist, or a pinch of cayenne for a spicy kick!
