Description

A sweet, boozy spread made with ripe bananas, warm spices, and a splash of rum. Perfect for toast, ice cream, or gifting!


Ingredients

  • 4 ripe bananas, mashed
  • 1 cup of granulated sugar
  • 1/2 cup of dark rum (or your choice of alcohol)
  • 1 tablespoon of lemon juice
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of vanilla extract
  • 1/2 cup of chopped nuts (optional)

Instructions

  1. Gather all your ingredients: ripe bananas, sugar, rum, lemon juice, spices, vanilla, and optional nuts.
  2. Peel and mash the bananas in a large bowl until mostly smooth with a few chunks for texture.
  3. Add sugar, rum, lemon juice, cinnamon, nutmeg, vanilla, and nuts (if using) to the mashed bananas. Stir until combined.
  4. Transfer the mixture to a large saucepan and bring to a gentle boil over medium heat. Then reduce to low and simmer for 30–40 minutes, stirring occasionally, until thickened.
  5. Remove from heat and let cool slightly. Pour into clean, sterilized jars and seal tightly. Store in the fridge for up to 2 weeks or process in a water bath for longer storage.

Notes

Use very ripe bananas for the sweetest flavor. Try adding mango or pineapple for a tropical twist, or a pinch of cayenne for a spicy kick!
