Ingredients

  • 1 cinnamon stick (Ceylon or Cassia) or 1/2 teaspoon ground cinnamon
  • 1 1/2 cups water
  • Optional: honey
  • Optional: lemon

Instructions

  1. Place the cinnamon stick in a small pot with the water.
  2. Bring to a gentle boil, then reduce heat and simmer for 10–15 minutes (or whisk ground cinnamon into hot water and steep 5–7 minutes).
  3. Remove stick or strain powder.
  4. Add honey, lemon, or ginger if desired.

Notes

For a stronger flavor, simmer cinnamon sticks up to 20 minutes. Use Ceylon cinnamon for daily tea to limit coumarin intake.
