Description
Soft, gooey cinnamon roll bars with a luscious cream cheese glaze – all the flavor of cinnamon rolls without the fuss of rolling and slicing.

- 2 cups (240 g) all-purpose flour
- 1 cup (220 g) brown sugar, packed
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup (115 g) unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar (for filling)
- 1 tablespoon ground cinnamon (for filling)
- 1 cup (120 g) powdered sugar
- 4 oz (113 g) cream cheese, softened
Instructions
- Preheat oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, whisk together flour, brown sugar, cinnamon, baking powder, and salt.
- In a separate bowl, mix melted butter, eggs, and vanilla extract until smooth.
- Combine wet and dry ingredients until just mixed.
- In a small bowl, mix 1/2 cup brown sugar with 1 tablespoon cinnamon for the filling.
- Spread half of the dough into the prepared dish.
- Sprinkle cinnamon filling evenly over the dough layer.
- Spread the remaining dough over the filling.
- Bake for 25–30 minutes or until a toothpick comes out clean.
- Let cool for 10–15 minutes in the pan.
- For the icing, beat softened cream cheese until smooth, then add powdered sugar. Mix until combined. Add milk if needed for desired consistency.
- Drizzle icing over cooled bars. Slice and serve warm or at room temperature.
Notes
For added flavor and texture, mix in chopped nuts or dried fruit. Bars can be made gluten-free by using a suitable flour blend.
