Ingredients

  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sour cream
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup churro pieces

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs, 1/2 cup sugar, and melted butter.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. In a large bowl, beat the cream cheese until smooth.
  5. Add sour cream, 1 cup sugar, eggs, vanilla extract, and cinnamon; mix until combined.
  6. Fold in churro pieces.
  7. Pour the batter over the crust in the pan.
  8. Bake for 55-60 minutes, or until the center is set.
  9. Let it cool, then refrigerate for at least 4 hours before serving.
