Ingredients

- 1 cup graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup sour cream
- 1 cup sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 cup churro pieces
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, mix the graham cracker crumbs, 1/2 cup sugar, and melted butter.
- Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese until smooth.
- Add sour cream, 1 cup sugar, eggs, vanilla extract, and cinnamon; mix until combined.
- Fold in churro pieces.
- Pour the batter over the crust in the pan.
- Bake for 55-60 minutes, or until the center is set.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- Serve with whipped cream on top.
- Churros can be made from scratch or store-bought.
- Allow cheesecake to cool completely before refrigerating.
