- 2 cups all-purpose flour
- 1 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 6–8 tablespoons ice water
- 2 cups fresh or frozen cherries, pitted
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 large egg
Instructions
- In a bowl, mix flour, sugar, and salt. Add butter and mix until crumbly. Add ice water gradually until dough forms. Wrap and chill for 30 minutes.
- In a saucepan, combine cherries, sugar, cornstarch, lemon juice, and vanilla. Cook on medium until thickened (5–7 minutes). Let cool.
- In a bowl, beat cream cheese until smooth. Add powdered sugar, vanilla, and egg. Mix until creamy.
- Preheat oven to 375°F (190°C). Roll out dough and place in pie dish. Spread cheese mixture over crust, then top with cherry filling.
- Use extra dough for lattice or decorations. Bake for 45–50 minutes until crust is golden and filling bubbly. Cool 30 minutes before serving.
Notes
Chill your dough well, don’t skip the cooling time, and cover edges with foil if browning too quickly.
