- 1 cup sugar
- 3 large eggs
- 1/2 cup unsalted butter, softened
- 1 can (14 oz) sweetened condensed milk
- 1 cup shredded coconut
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Gradually mix in the flour until just combined.
- Stir in the sweetened condensed milk and vanilla extract until smooth.
- Fold in the shredded coconut gently.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 35–40 minutes, or until the center is set and the top is golden brown.
- Allow the cake to cool slightly before serving. Enjoy warm or at room temperature.
Notes
Toasted coconut can add extra flavor. Avoid overmixing the batter for a light, tender texture. Pairs wonderfully with fruit or ice cream.
