- 2 ripe bananas
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup milk (or buttermilk)
- 2 tsp baking powder
- 2 tbsp sugar
- 1/4 tsp salt
- Butter or oil for cooking
- Optional: 1 tsp vanilla extract, 1/2 tsp cinnamon, 1/4 cup chopped nuts, 1/4 cup chocolate chips, 1/4 cup oats
Instructions
- Peel and mash the ripe bananas in a large bowl until smooth.
- In another bowl, whisk together flour, baking powder, sugar, and salt.
- Add eggs and milk to the mashed bananas and mix until smooth.
- Gently combine the wet and dry ingredients until just mixed (do not overmix).
- Heat a non-stick skillet over medium heat and add a little butter or oil.
- Pour about 1/4 cup of batter for each pancake and cook until bubbles form on the surface, then flip and cook until golden.
- Repeat with the remaining batter.
- Serve warm with toppings like maple syrup, banana slices, fresh fruit, or nut butter.
Notes
Use very ripe bananas for the best flavor. Avoid overmixing the batter to keep the pancakes fluffy. For extra fluffiness, whip and fold in egg whites separately.
