Apple zucchini bread is a moist, flavorful quick bread combining the sweetness of apples, the tender texture of zucchini, and a warm hint of cinnamon for a wholesome treat perfect for breakfast, dessert, or snacking.

- 1½ cups grated zucchini (excess moisture squeezed out)
- 1 cup peeled, cored, and grated or finely chopped apples
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 2 eggs
- ½ cup oil (or half oil, half applesauce)
- 1 cup sugar (reduce if preferred)
- 1 tsp vanilla extract
- Optional: ½ cup chopped walnuts, pecans, or raisins
Instructions
- Preheat oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan.
- Grate zucchini and apples, squeezing excess moisture from zucchini.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large mixing bowl, beat eggs, oil (or oil/applesauce mix), sugar, and vanilla until smooth.
- Gradually add dry ingredients to wet, mixing just until combined.
- Fold in zucchini and apples, along with any optional add-ins.
- Pour batter into prepared loaf pan and smooth the top.
- Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, toast nuts before adding. If top browns too quickly, cover loosely with foil during last 15 minutes of baking.
