Ingredients

- 2 cups shelled pistachios (preferably Iranian or Turkish)
- 1–2 tbsp organic honey or date syrup
- 1 tsp rosewater
- 1/4 tsp ground saffron or a few saffron threads (optional)
- 1–2 tbsp camel milk or dairy-free milk (optional, for creaminess)
- Pinch of salt
Instructions
- Lightly roast pistachios at 350°F (175°C) for 8–10 minutes for enhanced flavor. Cool slightly.
- Add pistachios to a food processor and blend until crumbly. Scrape down sides as needed.
- Gradually add honey or date syrup, rosewater, saffron, and optional milk. Continue blending until the texture is ultra-smooth and creamy.
- Adjust sweetness and creaminess to taste.
- Transfer to a glass jar and store in the fridge for up to 3 weeks.
Notes
Use premium pistachios for best flavor and color. Saffron and rosewater add a signature Dubai twist. Great for desserts, pastries, or as a gourmet spread.
